Tropical Upside Down Cake

4 Bananas, 2 teaspoons of shreaded ginger,2 table spoons of Rum …
1 sheet of puff pastry
1 cup granulated sugar
1/4 cup water
2 tbs butter, diced
2 teaspoons dark rum
4 bananas in 1/4 inch slices
2 tsp minced fresh ginger
1 egg, lightly beaten for glaze (hmm, I don’t think we did this)
Preheat oven to 425
Roll pastry to 10 1/2 inch square and cut a 10" round from it.
Refrigerate for 20 minutes.
Put sugar and water in heavy skillet over medium high. Stir till sugar
dissolves. Boil and cook, without stiring, for 8 - 10 minutes till
liquid becomes caramel color. Remove from heat. Add butter and rum.
Gently stir in bananas and ginger. Place chilled pastry over bananas
and brush with egg.
Bake about 20 mintues, cool 10 - 30 minutes. Invert onto plate.
Eat with ice cream.
