Papaya Mint Mango Salsa

½ Cup Diced Papaya (firm but ripe)
½ Cup Diced Mango (firm but ripe)
2 Jalapeno Chiles, seeded, de-veined and minced (use more or less to taste)
1 ½ Cup Finely Diced Red Onion
1 ½ Cup Minced Fresh Mint
1 Tablespoon Brown Sugar (optional)

In a glass or ceramic bowl, gently toss together the ingredients until well combined.  Be careful not to bruise the papaya or mango.  If you have trouble finding both ripe papaya and ripe mango, use double the quantity of one fruit.

(Makes approximately 2 cups)
