Poddy’s Waffles

My mother was a connoisseur of good food and created some unforgetable dishes.
Here is her recipe for waffles. The egg whites make all the difference.
The waffles should be served right from the waffle-iron.
Mix together:
2 cups flour + 1 tbsp
4 tsp baking powder
2 tbsp sugar
1 tsp salt
In large bowl mix together:
2/3 cup vegetable oil
1 3/4 cup milk
2 egg yolks
Beat 4 egg whites until stiff
Give the left-over 2 egg yolks to the dog.
Pour the dry mixture into the wet and beat with a mixer until just combined. Do not over beat.
Fold the egg whites into this mixture (a wooden spoon is preferable) until just combined. Do NOT beat.
Ladle mixture onto a waffle iron preheated to medium temperature.
Waffle is done when steam stops rising. Do not peek.
